Last week was supposed to be an easy week for me. I didn’t have anything major planned. Then all of a sudden my easy week got busy. I spent all of Thursday at the mechanics waiting for a part for my liftgate on the van and got the depressing news that I needed new tie rods and other parts for both front tires. Ugh!
Wednesday I spent the whole day baking bread and muffins for the kids lunches. And Friday was spent running around grabbing items I would need for the weekend and juice for pizza day at my kids school. Then all of a sudden my in-laws were here. And just like that the weekend is over.
Our youngest ended up running a fever all day Sunday and had to stay home from school today. The fever finally broke around dinner time. So I hope he’s done. He seemed better because he was able to eat and drink all day. We’ll see how he is in the morning.
So that brings us to right now. I just finished deciding what we’ll eat for the week and now I have to make a list and go shopping tomorrow hopefully. Did I mention this is a crazy busy week? Lots of good plans but it’s shaping up to be crazy busy.

Monday – Spaghetti and simple meat sauce
Tuesday – Spinach Quiche
Wednesday – Mexican Quinoa Casserole
Thursday – Chicken & Green Bean Casserole
Friday – Cheater Korean Beef on Rice and corn
Saturday – Pancakes for the kids, Nachos for hubs and I
Sunday – Pizza
Listing the pizza reminds me that, thanks to a friend of mine, I found an amazing local made gluten-free pizza! They make all kinds of topping mixtures and they’re pretty reasonably priced. This means I can now take part in pizza night. I’m so excited to be able to take part again and that the pizza is actually pretty amazing! I’ll try to remember to take pictures next week.
