It’s Thanksgiving Monday and we’ve had a restful and not overly busy weekend. We decided to stay home this year to get some work done around the house and outside while we still had good weather and so we will be enjoying our turkey this coming weekend.
My husband has been extra busy at work lately doing a big project and I’ve been stuck solo parenting a lot running the older two kids to their evening events and having to bring the younger ones with me as well. It’s also meant missing out on my weekly movie night with my best friend. Movie night is the highlight of my week! Things don’t show many signs of slowing down anytime soon either. I never expected life to get this busy with all four kids in school. I’m not sure I like it.
When things are busy I tend to plan our menu accordingly and make sure I prepare something that is either easy or something I can put in the crockpot in the morning. The cooler weather and season has me dreaming of soothing fall soups so I actually have two on the menu for this week, I’m really excited.
So this week we will be having:
Monday – Pad Thai
Tuesday – Broccoli Cheddar Soup
Wednesday – Shrimp & Sausage Jambalaya
Thursday – Potato Soup
Friday – Cheeseburger Casserole
Saturday – Turkey, Potatoes, Veggies (maybe some squash)
Sunday – Turkey Leftovers or Turkey Soup
