Menu Plan for the Week of October 26th

I’m a day late but, yesterday was a gong show of busyness. The older two kids had an orthodontic appointment first thing. And my day went wonky from there. If my usual Monday plans get messed up things never go the way I’d like.

Nothing new going on this week. We don’t celebrate Halloween¬†around here. I don’t stop the kids from dressing up for school if they want, but they have to choose something that can be easily made from items we have at home or that are in our dress up bin. So we won’t be doing any trick or treating on the weekend but the some of the kids are carving pumpkins and my youngest is having a little party in his class that is more of an open house than a Halloween celebration. His current teacher is leaving and he is getting a new teacher so it’s a chance to say goodbye and to meet the new teacher that he will have for the rest of the year.

I haven’t worked out all the details of the menu for this week yet but I have a good enough start and we’ll leave Saturday as a catch-up day.

So here’s the plan:

Monday – Brussel Sprouts Quiche
Tuesday – Chicken Enchilada Potatoe Casserole
Wednesday – Chili in the crockpot
Thursday – Korean Beef
Friday – Oven baked Leek & Bacon Risotto
Saturday – Leftovers
Sunday – Pizza/Thai Peanut Stir Fry
