In just a few days, the first official extra-curricular activities for my kids kick in. My daughter will be doing volleyball for the first time, and I have to admit I’m a little excited for her, I love volleyball and will play whenever I am given the chance. I really hope she enjoys it. And then the two older kids have a mid-week program at our church that they are excited to participate in. So that means two nights a week of chauffeuring kids around in the evening but I think it will be well worth it.
I’m in the tail end of my 10 day whole foods detox which will be ending on Wednesday and I have some pretty yummy food coming up for the last three days. I’ll do a wrap post once it’s over letting you know how it all went.
So with all that stuff in mind here is this week menu plan:
Monday – Broccoli Quiche (for kids and hubby), Baked Salmon, Mashed Cauliflower and Mixed Greens (for me)
Tuesday – Spaghetti & Meatballs (for kids and hubby), Lentil & Kale Dahl(for me)
Wednesday – Pancakes & Sausage(kids), Mediterranean Salad with Arugula & Chicken(for hubby and I)
Thursday – Pad Thai (missed last week)
Friday – Mexican Spaghetti Squash Casserole
Saturday – Burgers with Roast Beet Salad
Sunday – Pizza/Stir Fry on Rice
