And just like that, by the end of this week we will be half way through February!
Last week we tried a few Indian inspired dishes and they were amazing! So flavourful and the kids actually enjoyed them as well! I had to tame down the spices for the kids but I separated out a portion just for my husband and myself so we could add the kick and I am so glad we did. My husband is already asking to have the Chickpea Tikka Masala again soon and I think the kids will love that as well.
The only thing that wasn’t a hit last week was the Quinoa Crusted Turkey Pot Pie. Apparently it didn’t heat well and while it was flavourful, it will not be making a repeat appearance on our menu. I think the main issue was the “quinoa crust” was too thick and not the best tasting. I think we prefer a pot pie with a traditional crust. You win some you lose some!
The wings turned out really well and I can’t wait to try making them again with a BBQ sauce instead of a dry rub. You’ll notice that fish has been making a regular appearance and we are all glad for that! It’s been turning out so well. I’ve cooked it the same each time but with a different fish and every time it’s been so good. The kids always ask for seconds, but I never have enough for us to have seconds because I always manage to buy just enough fish for the meal.
I have a few new recipes on the menu again this week, I like to keep the kids on their toes and most of the new recipes are just a twist on something we already love anyway. I like to expose them to new and different flavours so that no matter where or what we have to eat the kids will already be familiar with some of the flavours.
So here is the plan for this week:
Monday – Spaghetti Squash Chow Mein
Tuesday – Fish, Tomato Risotto, veggie
Wednesday – Cheeseburger Soup
Thursday – Vegetable Pad Thai
Friday – Garlic Soy Chicken Thighs, Rice, Veggies
Saturday – Meatballs in BBQ Sauce, Mashed Potatoes, Veggies
Sunday – Pizza (Kids)/Sausage and Shrimp Jambalaya (DH & I)
