So, it’s the last week of January. This week should be calmer than last week, but with four kids all manner of things can crop up at a moments notice LOL. Nothing big on the agenda for this week except I plan on doing a lot more organizing and purging in the basement. I finally got some shelves for putting things away properly and I’m excited to fill them up. As I mentioned in my Week 3 Update of the 40 Bags in 40 Days Challenge, I was in a bit of funk last week and I didn’t get much done. This week I am on a mission to get as much done as possible.
That being said, my burst of energy also has me trying a few new recipes on the menu this week. It should be a very yummy week around here, I’ll be sure to post pictures and let you know how each of the new meals was on Instagram, so if you want to know how they turned out make sure you’re following me over there!
So here is the plan for this week:
Monday – Cauliflower Chowder
Tuesday – Cod with Butternut Squash Fries
Wednesday – Garlic Sauce Chicken with Rice and green beans
Thursday – Quinoa & Sweet Potato Enchilada Casserole
Friday – Loaded Spaghetti Squash
Saturday – Dill Pickle Soup and Salad
Sunday – Pizza
For Sunday, since I can’t have pizza my husband and I usually have something else that we’ve just thrown together so I was toying with the idea of trying this recipe for Pizza Roasted Chickpeas. If I try it I’ll let you know :).
