Although I love meal planning, sometimes it’s hard to do. I get into a meal prep funk. Sometimes I just want easy meals but when you’re committed to making everything from scratch with real ingredients, ‘easy’ isn’t always convenient. Don’t get me wrong, you can make easy real meals but we can’t have the same thing every week, plus I’m trying to use up food we already have to keep us under budget.
I love to cook and I love to cook new things but sometimes the kids reactions to the meals don’t always inspire me to cook anything new and exciting. All that being said, I think I have planned three new recipes for this week. What can I say, I’m a glutton for punishment. 😉
So here is our plan for the week:
Monday – Bacon and Beef Stuffed Butternut Squash
Tuesday – Fiesta Turkey Soup
Wednesday – Chicken Enchilada Potato Casserole
Thursday – Zucchini Quiche
Friday – Finnish Oven Pancakes (kids), Sausage & Veggie Stir Fry (DH and I)
Saturday – Mystery Meal (TBD)
Sunday – Pizza
