Menu Plan Monday

I cannot believe that January is already over! And like always the groundhogs couldn’t agree when winter would be over. So we’re left to rely on the meteorologists to let us know what kind of weather we’ll be having. (Fancy that? 😉 ) According to the weather network we’ll be having more cold weather all this month. Ugh! I’m tired of being cold, it’s been one really long cold winter this year it seems. I for one can’t wait for it to be over!

Anyway enough about the weather! Last week was one hit recipe after another. I don’t know if my kids are going through growth spurts or what but every meal went over quite well. The brussel sprout pasta I was planning for Thursday had to be quickly turned into a lemony shrimp and rice dish with roasted brussel sprouts as a side dish and it’s one time I’m glad I didn’t have pasta on hand! It was soooo good. On Saturday we had homemade burgers and fries, I even made the buns from scratch and I will never buy store bought buns again! The buns were perfect, light and HUGE lol. Next time I’ll make ten buns instead of eight :) (I pinned the recipe on my Breads board if you’re curious which recipe I used).

So I guess you’re wondering what we’re having this week! Well here it is:

Monday: Homemade Turkey soup and Spinach Salad
Tuesday: Turkey Pot Pie
Wednesday: Brussel Spout Pasta (because we didn’t get it last week)
Thursday: Zucchini Quiche
Friday: Chicken & Broccoli Stir Fry
Saturday: Asian Stuffed Napa Cabbage Rolls
Sunday: Pizza

    We are really impressed that you have all your menu planned of the week. I have tried to do it so many times and I only last a couple of weeks. I guess for you it is a must to stayed organized. We are really tired of the cold as well. Can’t wait for spring.
